Sift together the following:
2 1/2 c. flour
1 1/2 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
In a separate bowl mix the following:
3 ripe peeled bananas
2 large eggs
3/4 c. sugar
1/2 tsp. vanilla
1/2 c. (1 stick) butter melted and cooled
Add the wet ingredient mixture to the dry ingredients and blend until well combined. Add into the mixture 3/4 c. old fashioned rolled oats (not quick cooking). Pour evenly into 2 greased loaf pans and place in a preheated 350 degree oven for 50 minutes, or until golden brown and springy to the touch. Remove from pans and place on a baking rack until cooled. DELICIOUS-O!
